Rachel's Notes: this is a diabetic version of this recipe, if you family is not diabetic then use regular version fruits and vanilla pudding mix

Vanilla Fruit Salad

Drain fruit and reserve juice, measure out 1 cup of reserved liquid discarding any extra, mix liquid with vanilla pudding mix. Stir in fruit and stir well, chill and serve.

Rachel's Notes: I found this recipe here, on the Eat at Home blog, the concept is so simple, while we are not diabetic I try to watch my sugar intake and always buy sugar free versions of fruit and pudding mixes. The DH and I both really liked this dessert! This would really be cool and refreshing on a hot day. This is a TOO HOT TO COOK SERIES RECIPE.
