1- 15oz can crushed pineapple not drained
1- 16 oz carton fat free cottage cheese
1- small pkg pistachio sugar free pudding mix ,dry
1-8oz carton whipped topping, sugar free
In a bowl mix together crushed pineapple and dry pudding mix, stir in cottage cheese and mix well, finally fold in whipped topping. Chill and serve.
Rachel's notes: This is low calorie and a great dessert that has some staying power the cottage cheese adds some protein, the pudding mix and pineapple make it sweet I love this in the summertime! This is a lovely green color and absolutely delish! Another TOO HOT TO COOK RECIPE!
