Unstuffed cabbage casserole

6 c chopped green cabbage

1 lb lean ground beef

1 small onion, chopped

1/ cup brown sugar or sugar substitute

2 tsp mustard (your favorite kind)

1/2 tsp salt

1/2 tsp pepper

1 tsp crushed red pepper (optional)

2 cans diced tomatoes

2 c instant brown rice (not cooked)


Preheat oven to 350*. Spray a 2-qt casserole dish with Pam. Place the chopped cabbage in the dish.

Brown the beef and onion in a skillet; drain excess fat.

Add the rice, salt and pepper to the ground beef. In a small bowl mix the 2 cans of tomatoes, mustard, brown sugar and crushed red pepper, adjust spices to taste You may have to add salt to this,(sometimes I have to add a little more sugar more mustard etc, pour over the meat mixture. Stir well, pour the mixture in the casserole dish.

Cover and bake for 35 minutes. Remove from oven, check liquid level adding more as necessary, bake for approx 25 more minutes or until rice is cooked. Let stand a few minutes before serving.



Rachel's Notes: I love this dish, I really like cabbage rolls but don't always have the time to make them. So I found this recipe on the internet and switched it up for my tastes, I like mine to be sweet and tangy, you may have to adjust the heat if you have kids. WW message board again!
