Pizza Soup

 

1 onion, diced
1 green bell pepper, diced
8 oz mushrooms, sliced thin
2 cloves minced garlic
1 lb lean ground beef 93% lean
12 oz can tomato paste
2 (14.5 oz) cans chicken broth
2 TBS Italian seasoning
3 oz slices turkey pepperoni, diced (240 calories, 12 g fat, 0 calories) (this is 1/2 package of most brands)
FF or 2% mozzarella cheese, shredded

Saute first five ingredients in a large stockpot over medium-high heat, until beef is cooked and veggies are tender. Add all other ingredients and stir well. Bring to a boil over medium heat, then reduce heat to low and simmer for 20 minutes. Top each serving with cheese.

Makes approximately 8 1-cup servings

 

Rachel's Notes:

This is a little bit lighter version of the original recipe, add whatever you family likes, to make it taste like sausage is in there add 2 tsp sage, or if you are not calorie watching then go ahead and add some Italian sausage makes it even yummier! Please note for a thicker soup do not use all the chicken broth I sometimes use more italian seasoning also
