1 pound hot Italian sausage, removed from casings
1 pkg frozen chopped peppers and onions (I get the tri colored variety)
2 cups grated pepper jack cheese
1 dozen corn tortillas or flour
Lettuce and tomatoes as desired
In large skillet, brown sausage and pepper mix, breaking up meat as it cooks. Drain on paper towels to remove as much grease as possible. Place back into pan and turn heat on very low, and add cheese, place lid on top and allow cheese to melt, serve in warmed tortillas with desired condiments
Rachel's Notes: this was absolutely YUMMY, The DH gave this a big thumbs up, you can also use mild Italian sausage if need, I used reduced fat cheese and lite sour cream. I found this on the internet at www.lifeasmom.com she called it queso fundido.
