1 sleeve crackers ( I used Ritz)
1 lb Fresh Fish (I used salmon)
½ stick butter (sliced)
1 tsp Pepper or Old Bay Seasoning as desired
1 cast iron skillet large enough to place fish in
Preheat oven to 400 degrees with cast iron skillet inside. Leave cast iron skillet in oven until you have fish breaded.
Crush Crackers to form crumbs, they do not have to be real fine.
Beat egg and add seasoning. Dip pieces of fish in egg and then in cracker crumbs. Place aside. After oven is preheated take iron skillet out and add cold butter to pan. Place back in oven until butter is melted watching carefully to keep butter from burning.
After butter is melted add fish and place skillet bake in over for 15-20 minutes, turn fish ½ way through cooking.
Fish should be nice and crispy and you can use canola oil instead of butter if desired.

I just cooked mine in a cast iron skillet and changed the recipe slightly. I thought of a raft for some reason and decided to call this crashed fish, that is if your raft crashed into a hot cast iron skillet.
