Hurry-Up Chicken Enchiladas

Prep/Cook Time: 15 min

1 lb. boneless chicken breasts, cubed
1 can (10 3/4 oz.) 98% Fat Free Cream of Chicken Soup
1 cup Pace® Chunky Salsa
8 flour tortillas (6")
1 can Campbell's® Cheddar Cheese Soup

1 pkg taco seasoning (or 1.5 tablespoons homemade mix)

½ cup shredded fat free cheese or lowfat


COOK chicken in nonstick skillet until browned and done, stirring often. Add chicken soup, 1/2 cup salsa and taco seasoning. Heat through.

SPOON about 1/3 cup chicken mixture down center of each tortilla. Roll up tortilla around filling and place seam-side down in 2-qt. microwave-safe baking dish.

MIX cheese soup and remaining salsa and pour over enchiladas.

COVER and microwave on HIGH 5 min. or until hot. Top with cheese and Cook another minute or so cheese should melt while standing.Let stand 5 minutes then serve.

Rachel's Notes :Honestly I only got 6 tortillas filled but mine were a little larger and I am note sure if I had enough chicken.Double this for a larger family 2 of these each were enough to feed the Dh and I with rice and beans as sides.

Anyway these were delicious! Even the DH gave these 4 stars out of 5!
