Yum Yum Cake

2 c. flour

2 c. sugar

2 c. crushed pineapple (I just use a 15oz can undrained)

2 eggs

2 tsp. baking soda

 

Mix all dry ingredients. Add eggs and pineapple. Mix with spoon; do not overmix. Pour into 10 x 13 inch pan and bake at 350 degrees for 35 to 40 minutes. Or until done. Make sure toothpick comes out clean

 

TOPPING FOR YUM - YUM CAKE:

 

½ cup evaporated milk (or just buy the small 5 oz can and use the whole thing)

1 c. sugar

1 1/2 c. coconut

1 c. pecans

1 stick butter

1 tsp lemon juice

1 tsp vanilla

 

Mix milk, sugar, and butter in pan and cook for 2 minutes. Remove from heat. Mix coconut and pecans, lemon juice and vanilla , pour on while cake and topping are hot. Simply Delicious! I have an old recipe book that my sister gave me and this recipe was in there.
