2 cups sugar
1 teaspoon baking powder
2 cups brown sugar
2 teaspoons soda
2 cups shortening
2 teaspoon cinnamon
2 teaspoons vanilla
4 eggs
3 cups flour
1 teaspoon salt
6 cups oatmeal
Cream sugar and shortening, add eggs. Sift dry ingredients. Add to cream mixture, add vanilla. Form dough into balls, size of walnuts. Roll in sugar. Bake on greased cookie sheet. Bake at 350 degrees F for 8 to 10 minutes.



Rachel's Notes:

Makes several dozen as written can halve recipe. I got above 3 dozen and only made half I make good sized cookies!

I really like these cookies, they have a different texture than most sugar cookies or oatmeal cookies, these need to cool very good before you move them as they just fall apart when warm. If you really like cinnamon consider adding another teaspoon as written they have a very soft cinnamon taste just a hint really. found on the web.
