Chocolate covered cherry cookies
1 1/2 cup flour
1/2 cup unsweetened cocoa
1/4 tsp. salt
1/4 tsp. baking powder
1/4 tsp. baking soda
Mix these ingredients and set aside.

1/2 cup butter softened
1 cup sugar
1 egg
1 1/2 tsp. vanilla

1 tsp Cherry extract or 3 drops cherry flavoring (the really concentrated kind)
1 jar maraschino cherries
In mixing bowl, beat butter and sugar on low speed until fluffy. Add egg and vanilla and beat well. Gradually add the dry ingredients to creamed mixture and beat till well blended. Form the cookie batter into 1" balls and press down with your thumb to form an imprint and place 1/2 of a cherry in the imprint.

FROSTING
1 6oz package of semi sweet chocolate chips
1/2 cup Eagle brand milk
4 tsp. cherry juice

1 tsp cherry extract or 4 drops cherry flavoring
Melt in small pan, chocolate chips and milk, removed from heat and add cherry juice and extract, (If frosting becomes too thick, add small amounts of cherry juice to thin.)
Cover the cherry with the frosting, approx. 1 tsp. of frosting. Bake at 350 for approx. 10 minutes.

Rachel's Notes:

Ok I know it's a little weird to bake the frosting on the cookies but it works well. It is hard to tell when the cookies are done since they are chocolate Mine were done after 10 minutes just trust yours to be done or test one. I recommend baking these on parchment paper, (not wax paper.) the chocolate frosting will stick to the cookie sheet.

You can buy cherry flavoring or cherry extract at most grocery stores. The DH and I gave these a big thumbs up!
