Bites of Chocolate Delight
Ingredients
8 ounces softened cream cheese you can use Neufchâtel cheese
18 ounces package of chocolate sandwich cookies, crushed (can use Fat Free or reduced fat)
2 cups semi-sweet or milk chocolate chips (can use white chocolate bark also)
1 tablespoon shortening (optional it helps to make the chocolate a little thinner for dipping)
Instructions
Mix cream cheese with electric mixer until fluffy. Add the crushed cookies and beat on high until well mixed. Chill for at least 1 hour in the fridge. Then roll cookie mixture into one inch balls. Freeze for about 30 minutes before dipping in chocolate.
Next, melt the chocolate chips and shortening with a double boiler or in the microwave.
Dip the balls completely into the melted chocolate using tongs or a toothpick.
Put on wax paper. After the bites harden, keep them in the refrigerator.
Makes about 3 or 4 dozen bites of delight, depending on the size.

These are soo very good they will not stay around long, you can make them ahead and freeze, just thaw them before serving. WW message board again!
